Coconut Milk Rice (With Raw Mango)

Inspired by the subtle infusion of whole spices in variety of rice recipes(by Nava), here I got one. No powdered spices required, just the whole ones should suffice. This is a simple recipe, but tastes pretty good. I added raw mango to give that kick, since we are not adding any powdered spices. The coconut milk, gives the mild sweetness to the rice which gets enhanced by the sharp sour taste of raw mango. If you are one of those, who appreciates the innate taste of whole spices or veggies, probably you will like this rice. Give it a try.
Coconut Milk Rice
Ingredients:
1)Long Grain Rice - 1 cup
2)Raw Mango - 1/2(chopped)
3)Carrot - 1(chopped)
4)Green Chilli - 1 to 2(slit)
5)Onion - 1 (small, chopped)
6)Coconut Milk - 3/4 cup(thick, add 1/4 cup water to dilute it) - (I got Dabur brand Coconut Milk)
7)Ginger - 1/2 inch (grated)
8)Salt - to taste
9)Oil - 1.5 tsp
10)Cumin seeds - 1 tsp
11)Cinnamon stick, Cardamon and Cloves - a few
Coconut Milk Rice (With Raw Mango)
Preparation:
1)Soak the rice in water for 30 minutes. Heat oil in a pan and add cinnamon, cardamon, cloves, cumin seeds, let it splutter.
2)Add slit green chilli and grated ginger, saute for couple of seconds.
3)Add chopped onion, salt and saute until onion turns translucent.
4)Add chopped mango and carrot, saute for 2 to 3 minutes.
5)Now add the coconut milk and mix well.
6)Add the soaked rice and mix well. Adjust the amount of water.
7)Transfer the content to a pressure cooker and cook for 2 whistles.

Coconut milk rice is ready.

  3. My name??? Oww, thanks so much my great friend. I have to nod that we eat load of rice, especially myself more than my other half. He can survive on bread but for me, no rice, no life.

    I noticed that you used milk and yes, I use the same and add pandan/screwpine leaves for our version called "Nasi Lemak". I must try this because the other attraction is the mango, another which is my fav. The ingredients all came together for a creamy tangy explosion to my greatest liking.

Yes Nava :-), I'm kinda impressed by the true & innate taste from the real ingredients rather than covering up with lots of extra spices, so I'm all in for simple yet rich recipes any day and hence I like your rice recipes so much. I love rice and roti equally, but I'm lazy to make roti - but rice is easier - One pot meals are a Savior any time.

      We don't get screwpine here, but I remember your usage of this ingredient in Nasi Lemak.
      Do try, it is pretty good.

  7. Very innovative and interesting Pavithra.. Lovely combination of mango and coconut milk with rice.. Addition of carrot makes it even more healthier and loved the whole garam masala (cinnamon, cardemom and cloves) you have put in the tempering.. Droolworthy dish dear :-)

  10. I am a big fan of your rice recipes. They look simple yet very appetising. I love the fact that this recipe uses whole spices. That is how I like my rice. In the second picture, the rice is glistening in delicious glory...makes you want to eat it right away:-)

      I love whole spices too, they kinda give the right amount of spice level to the rice, more than the powders that we use.

How many times a day do we use some form of technology in life? Google showcased the concept of  " Google Glass " in 2012, but for the past couple of months people( 500 to 600 so far ) started using the Glass and have come up with mixed reviews, with the feedback slightly tilting towards the negative side. Simple Dal Makhani

For years, I never liked Dal Makhani - until I tasted this recipe in a mini North Indian Restaurant in Whitefield. From then on, this has become my staple food. Ingredients : 1)Black lentil(Whole black gram with skin) - 3/4 cup 2)Kidney beans - 1/4 cup 3)Onion - 1 (big sized, chopped) 4)Tomato - 2 (bright red, medium sized, chopped) 5)Green chillies - 2(chopped) 6)Ginger garlic paste - 1 tsp 7)Turmeric powder 8)Red chilli powder 9)Cumin seeds - 1 tsp 10)Salt - to taste 11)Oil or Ghee - 2 tsp 12)Cream or milk - 2 or 3 tsp(according to taste) 13)Water - 1 cup 14)Garam masala - 1/2 tsp 15)Cilantro, Butter - (very much optional) Preparation : 1)Soak the lentil & kidney beans overnight in separate vessels.
