Paneer & Capsicum Masala(dry)

Okie, it may sound weird but I like to make Paneer & Capsicum Masala in a dry form and have it along with rice instead of roti. So here comes the recipe,
Paneer & Capsicum Masala (dry)
Ingredients:
1)Paneer - cut into medium sized cubes.
2)Oil - 3 spoons
3)Green Peas - a handful(I got frozen peas)
4)Capsicum - 1(I used Yellow, you can add red or green as well)
5)Tomato - 2 medium sized cut into small pieces
6)Onion - 1 medium sized cut into small pieces
7)Green chilli -  1 medium sized cut into small pieces
8)Red chilli powder - 1 tsp
9)Coriander powder - 1 tsp
10)Cumin powder - 1 tsp
11)Turmeric powder - 1/4th of a tsp
12)Salt - to taste
13)Curd - 2 tsp
14)Garam masala powder- a pinch
15)Ginger & Garlic paste - 1 tsp
16)Cumin seeds - 1 tsp
17)Lemon juice - 1 tsp
18)Coriander leaves - 2 sprigs

Preparation:
1)Take a frying pan, add 1 tsp of oil & tilt the pan so that it spreads all over the pan, now add the cut paneer cubes & saute until the corners turn brown or (in the way you need). Keep aside.
2)In the same pan, add 2 tsps of oil and add cumin seeds, let it splutter.
3)Add green chillies, onion, salt - saute until onion turns translucent.
4)Add ginger garlic paste, saute for 2 minutes.
5)Add cut capsicum, saute until capsicum gets 80% cooked(Note: The texture should still be firm)
6)Add cut tomatoes & turmeric powder, saute until it gets cooked.
7)Now add the following & fry until the raw smell goes - "Red chilli powder , Coriander powder, Cumin powder, Garam Masala powder". You can add 2 spoons of water & cook for 2 more minute.
8)Now add the green peas & blend the mixture along with peas & cook for 2 minutes.
9)Add some water - if you want to have the consistency of a gravy, if not skip this step.
10)Now add curd diluted with a spoonful of water & blend it. Let it cook for 2 minutes.
11)Add the fried paneer cubes & blend it, make sure paneer doesn't break.
12)You can remove the pan from the stove & add a spoonful of lemon juice & mix well. Thrown in some coriander leaves.

There you go, your dry Paneer & Capsicum Masala is ready!

Tips:
1)Once you are done with sauteing(or frying) the paneer, you can add it to a bowl with luke warm water, this will keep the paneer soft.
2)Or you can add the sauteed paneer into a bowl with 2 tsps of curd diluted with a little water. This will also keep the paneer soft and juicy.

Egg Masala Dry

What can I say? This one is even more simpler but tastes like heaven! Onion and Tomato Chutney

If you are one of those, who is bored of the regular coconut chutney day-in-day-out, then this chutney will be a life saver. It is a good mix of onion, tomato and coconut sauteed with spices and ground to perfection. This goes very well with Idli, Dosa and also as a side to Curd Rice.
