"Kothu Paratha"(or 'parotta' as they call it in streets) is a famous street food. Take 25 bucks, walk straight to the corner of a Kerala or Tamil Nadu street and you are gonna see a tiny shop which digs out this recipe in split seconds. It is always a pleasure to see the cook making those thumping sound on a really big Tawa(flat pan) over fire wood with 2 big spatulas.
It is my childhood memory, going to these shops for Sunday dinner. Of course there is no place to sit and eat, hence we usually get a parcel(take out). My mom always worries about the quality & the hygiene of the food from places like these road side shops. So that is when I decided to deconstruct the recipe & make it at home.
The only difference is that, the road side shops used to add chicken stock or gravy(from chicken curry) to the scrambled parathas, which actually gives the extra punch. But even if you don't add the gravy, it is still mouth-watering.
Ingredients:
1)Kerala Paratha (buy the ready made parathas available in grocery, just flip them in a tawa with little oil , you are good to go) - 2 Nos
2)Green chilli - 2(small , chopped)
3)Onion - 1(big , chopped)
4)Tomato - 2(medium , red , chopped)
5)Ginger garlic paste - 1 tsp
6)Egg - 2 nos (PS: Vegetarians , you can just skip this ingredient)
7)Oil - 2 tsp
8)Turmeric - a pinch
9)Salt - to taste
10)Red chilli powder - 1 tsp
11)Coriander powder - 1 .5 tsp
12)Cumin powder - 1/2 tsp
13)Cumin/Mustard seeds - 1 tsp
14)Lemon - 1/2
15)Butter - a small cube
Preparation:
1)Heat a flat pan(tawa) with little oil & cook the par-cooked parathas until they are done. Scramble them & keep aside.
2)Heat a frying pan, add 2 spoons of oil, once hot enough, add cumin/mustard seeds and let it splutter.
3)Add chopped green chillies, saute them.
4)Add chopped onions, salt and saute them till they become translucent.
5)Add ginger garlic paste and saute for a minute.
6)Now add the chopped tomatoes & saute them until the lumpy tomatoes become mushy, you may add few tsps of water if required
7)Add red chilli, coriander, cumin powder along with turmeric powder & saute until the raw masala smell goes off and blends with the content.
8)Now break 2 to 3 eggs & add it to the mixture, keep stirring(It may look gooey but the end result is awesome). Also (PS: Vegetarians, you can skip point number 8 & 9)
9)Keep stirring till the gooey egg becomes solid & blends with the content.
10)Taste the mixture, make sure the salt & spice level is just right.
11)Now add the scrambled parathas into the pan & mix well.
12)Squeeze lemon juice over the content & mix well.
13)Last but not the least, add a teeny tiny cube of butter over the hot mix & serve hot.
